75g wholemeal self-raising flour

75g ground almonds

150g sugar

1 tsp baking powder

½ tsp cinnamon

150g melted butter

2 eggs

2/3 apples

Icing sugar for dusting


Pre-heat oven to 180C/350F

Grease and line a deep round cake tin with baking parchment

Mix the dry ingredients together, followed by the butter and eggs, then add to the tin

Core and slice the apples, then arrange on top of the cake batter

Bake for around 40 minutes, or until a knife stuck into the centre of the cake comes out clean

Leave to cool in the tin, then dust with icing sugar

Enjoy warm with a scoop of ice cream or crème fraiche, or cold with a tea or coffee.
